Hilly is a lightly soured and complex beer that does things differently in our endeavour to explore the frontiers of brewing. Hilly is firstly brewed from a no-boil wort to preserve precious flavours from the malts, then kettle soured and finally dry hopped with cryo Simco and Amarillo hops. Refreshing, sour and hoppy!
